Pickled red onions
- Cook the black beans on the stove top until they are warm. Smash and season them with cumin, chipotle in adobo, salt, and pepper. This is the “meat” of the taco./li>
- Heat up the tortilla on the stove and top the”meat” with chunks of roasted sweet potato, corn, crumbled queso fresco, and some pickled onions. Enjoy!
