Chilaquiles

Ingredients:

8 4” tortillas

1 cup salsa

1 egg

1 jalapeno

Crumbled cheese

Leftover veggies

Instructions:

  1. In a skillet, shallow fry about 8 mini torn up tortillas until crispy. Drain and season.
  2. Discard the frying oil, and add the tortilla chips back to the pan, topping with about a cup of any salsa you like. Let them simmer.
  3. While the chips and salsa simmer, fry an egg. T
  4. o assemble, top the chips and salsa with the fried egg, some sliced jalapeños, a little crumbled cheese, and any leftover veggies.
