Breakfast Taco Recipe

Ingredients:

1 package of 6” tortillas

4tbs of butter

2 eggs (per person)

Jalapenos

Cilantro

Crumbled cheddar

Bacon

Avocado

Instructions:

  1. Over a gas burner, gently warm a package of 6” tortillas. Wrap them in a clean towel to keep warm while you prepare the eggs.
  2. In a large skillet over low heat, melt 4 tbsp of butter. Gently beat two eggs per person, season with salt and pepper, and scramble gently until fluffy, but still soft.
  3. Put out the eggs with the warm tortillas and an assortment of garnishes so everyone can serve themselves and have it their way. We love sliced jalapeños, cilantro leaves, crumbled cheeses, any leftover roasted veggies, crispy bacon, and some avocado.
