Ingredients (Serves 2):

  • 2 6” Organic Corn Tortillas by Vermont Tortilla Company
  • 4 large eggs
  • 4 slices of crispy bacon
  • 1 avocado, sliced
  • 2 tablespoons maple syrup
  • 2 tablespoons milk or cream (for scrambled eggs)
  • 1 tablespoon butter (or oil for cooking eggs)
  • Salt and black pepper to taste

Instructions:

  1. Cook the Bacon:
    • Heat a skillet over medium heat and cook the bacon until crispy. Transfer to a plate lined with paper towels to drain excess grease. Set aside.
  2. Scramble the Eggs:
    • In a bowl, whisk together eggs, milk (or cream), salt, and pepper.
    • Heat the butter in a nonstick skillet over medium-low heat. Add the eggs and cook gently, stirring with a spatula, until soft and creamy. Remove from heat.
  3. Prepare the Tortillas:
    • Warm the tortillas in a dry skillet or microwave for about 10-15 seconds to make them pliable.
  4. Assemble the Wraps:
    • Lay each tortilla flat and layer with scrambled eggs, 2 slices of crispy bacon, and a few slices of avocado.
    • Drizzle 1 tablespoon of maple syrup over each wrap.
  5. Wrap It Up:
    • Fold the sides of the tortilla inward and roll it tightly from the bottom up. Slice in half, if desired.
