Step 2: Nixtamalization

The corn is cooked in a solution of water and lime. This mixture is heated to just below boiling and then left to steep overnight. During this time, the lime water works its magic, transforming the corn both nutritionally and physically.

Step 3: Rinsing the Nixtamal

The next morning, the nixtamal is thoroughly rinsed to remove any remaining lime solution. This step is essential to achieve the right flavor and to prepare the corn for grinding.

Step 4: Stone Grinding

They cook for about 10 seconds on the first side, then are flipped to cook the other side for about 10 seconds, then a third time for the final 10 second pass. A well-made tortilla will puff up slightly as steam builds inside, indicating that it's perfectly cooked.
