Recipe for Chilaquiles

Ingredients:

8 4” tortillas

1 cup salsa

1 egg

1 jalapeno

Crumbled cheese

Leftover veggies

Instructions:

  1. In a skillet, shallow fry about 8 mini torn up tortillas until crispy. Drain and season.
  2. Discard the frying oil, and add the tortilla chips back to the pan, topping with about a cup of any salsa you like. Let them simmer.
  3. While the chips and salsa simmer, fry an egg. 
  4. To assemble, top the chips and salsa with the fried egg, some sliced jalapeños, a little crumbled cheese, and any leftover veggies.
