Ingredients (for 60 servings):

  • 60 Vermont Tortilla Company's 6-inch bulk tortillas
  • 2 pounds smoked salmon, thinly sliced
  • 10 ripe avocados, sliced
  • 4 cups crème fraîche
  • 2 large cucumbers, thinly sliced
  • 2 red onions, finely sliced
  • 2 cups capers
  • Fresh dill for garnish
  • 1 cup lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste


  1. Prepare the Tortillas:
    • Preheat the oven to 350°F (175°C). Cut each tortilla into four equal quarters to create small triangles.
    • Arrange the tortilla triangles on baking sheets and brush lightly with olive oil.
    • Bake for about 5-7 minutes, or until the tortillas are crisp and golden. Let them cool.
  2. Prepare the Crème Fraîche:
    • In a medium bowl, mix the crème fraîche with lemon juice, salt, and pepper to taste. Set aside.
