Cheddar & Kale Quesadillas

Cheddar & Kale Quesadillas


1 bunch of kale

1/2 a yellow onion

2 tsp olive oil

3 VT Tortillas

Grated cheddar

Salt and pepper


Clean, stem and chop the kale. Dice the yellow onion. In a large skillet, heat a few tablespoons of olive oil, add the onion followed by the kale and sauté until wilted. Season with salt and pepper, remove from the heat and set aside.

Wipe out the skillet. Add a little more oil. When hot, add tortillas, top with cheddar, some of the sautéed kale and another tortilla on top. Cook until crispy and the cheese is melted, about three minutes on each side. Enjoy hot!
