Charred Tomatillo and Black Bean Tacos


4 small tomatillos

2 tbsp olive oil



½ can of black beans

Cotija cheese



1 fresno chili pepper

4 6” tortillas


  1. Peel, rinse and quarter 4 small tomatillos. Coat lightly with olive oil; season with salt and pepper.
  2. On a hot grill or grill pan, cook until soft and charred, flipping every 2 minutes to cook on all sides. About 6 minutes total. Transfer to a cutting board.
  3. On the same grill warm four 6” tortillas.
  4. Rough chop the grilled tomatillos.
  5. Top each tortilla with a scoop of cooked black beans, the tomatillos, cotija cheese, scallions, cilantro and sliced Fresno chili pepper.
  6. Add some flakey sea salt and fresh lime know the drill!
