Charred Tomatillo and Black Bean Tacos
Ingredients:
4 small tomatillos
2 tbsp olive oil
Salt
Pepper
½ can of black beans
Cotija cheese
Scallions
Cilantro
1 fresno chili pepper
4 6” tortillas
Instructions:
- Peel, rinse and quarter 4 small tomatillos. Coat lightly with olive oil; season with salt and pepper.
- On a hot grill or grill pan, cook until soft and charred, flipping every 2 minutes to cook on all sides. About 6 minutes total. Transfer to a cutting board.
- On the same grill warm four 6” tortillas.
- Rough chop the grilled tomatillos.
- Top each tortilla with a scoop of cooked black beans, the tomatillos, cotija cheese, scallions, cilantro and sliced Fresno chili pepper.
- Add some flakey sea salt and fresh lime juice...you know the drill!
