Smashed Boiled Egg Taco
2 tsp olive oil
1 boiled egg
3 6” tortilla
- Sauté some mixed peppers and onion in olive oil until soft, seasoning with salt, ground cumin and pepper.
- Warm a few 6” tortillas, and top with the pepper mixture.
- Peel one boiled egg per taco and smash gently with the back of a fork.
- Finish each taco with some cilantro, sea salt and a little crumbled feta or goat cheese. Enjoy!
