Recipe for Shishito Pepper Tacos
Handful of shishito peppers
3 tbs olive oil
¼ cup mayo
Pinch of cayenne
Pinch of chili powder
Sprinkle of salt
Squeeze of a lemon
Stack of 4” tortillas
- Toss a handful of shishito peppers in olive oil and throw them on a hot grill to char.
- At the same time, gently warm a stack of mini tortillas on a cooler portion of the grill.
- Mix a quick sauce with about 1/4 cup mayo, a pinch of cayenne, a pinch of chili powder, a little salt and a squeeze of lemon juice.
- Finish the shishitos with some flakey sea salt and enjoy. They’re the perfect snack before dinner gets going.
