King Oyster Mushroom Tacos
King oysters are sturdy, meaty mushrooms, which means they can really get the job done when it comes to a quick, healthy dinner.
2 tsp olive oil
1 lb king oyster mushrooms
Pinch of salt, pepper, chili flakes
Handful of cilantro
A few scallions
2 Vermont Tortillas
- Heat a generous amount of olive oil in a large skillet. When it shimmers, add 1lb king oyster mushrooms sliced into large chunks. Don’t touch them, allowing them to sear and brown well. After about two minutes, rotate them and sear the other side, seasoning lightly with salt and pepper.
- While the mushrooms cook, roughly chop a handful of cilantro and a few scallions, combining them with the juice of one lime, salt, pepper, chili flakes and olive oil.
- Fill warm tortillas with the crispy mushrooms and a generous amount of the rough salsa verde.
